This past November, we asked 10 of our talented mixologist, foodie and photographer friends to help us create a cocktail recipe inspired by our hometown of beautiful Victoria, BC. Presented with a curated collection of our favourite local ingredients, they were put to the task. The stunning creations you find below are the results!

    Fresh Lemon Juice
    ½OZ
    ‘Garden of Secrets’ Tea Syrup
    1TSP
    Habanero Honey Syrup
    2DASHES
    Lem-Marrakech Bitters

    Egg White
    Dehydrated Orange, Tea & Pea Blossom
    Method
    Add all ingredients to a shaking tin, add ice, and shake well. Strain and dry shake, then open pour into a chilled glass. Garnish with ‘Garden of Secrets’ tea blend, butterfly pea blossoms, and a dehydrated orange wheel. Serve with Tingo Maria Sirene Chocolate topped with Saltwest sweet and smoky maple sea salt.

    LAVENDER, CRANBERRY & ORANGE

    2OZ
    Empress 1908 Gin
    1OZ
    Lavender Cranberry Honey Syrup
    2OZ
    Fresh Squeezed Orange Juice
    ¼OZ
    Lemon Juice
    2DASHES
    Grapefruit & Hops Bitters
    Champagne (to top)
    Cranberries
    Method
    In a shaker, add orange juice, lemon juice, simple syrup, bitters and ice. Shake until cold. Strain into a coupe glass. Add 2 oz of Empress 1908 Gin. Top with champagne. Place cranberries on a cocktail pick and rest on top of the glass.

    EMPRESSIVE GIMLET


    ingredients
    2OZ
    Empress 1908 Gin
    ½OZ
    Grapefruit Liqueur
    ¾OZ
    Fresh Lime Juice
    ½OZ
    Earl Grey Cordial
    1Pinch
    Sea Salt
    Grapefruit Wedge
    Method
    Add all ingredients to a shaking tin and then add ice. Shake well and strain into a chilled coupe. Garnish with a half slice of grapefruit.

    SNOWBIRD

    Blanco Tequila
    ½OZ
    Lavender-Infused White Port
    ¾OZ
    Fresh Lemon Juice
    1TSP
    Lemon-Ginger Honey
    5DASHES
    Moondog Latin bitters
    Method
    Combine everything, except the gin, in a cocktail shaker and short shake with ice. Strain into a rocks glass and fill with crushed ice. Top with 1 oz of Empress 1908 Gin and garnish with a grapefruit slice.

    LAVENDER PEACH SOUR

    Natural Peach Liqueur
    ½OZ
    Lavender Syrup
    ¾OZ
    Fresh Lemon Juice

    Peach Bitters
    Lemon Twist
    Method
    Mix ingredients and shake well with ice. Double strain into coupe.

    THE MEMORY OF EMPRESS

    Homemade Empress Tonic (Recipe Below)
    Grapefruit Twist
    Method
    Gather a ½ tsp of each Empress 1908 botanical: juniper, black tea, rose petal, coriander seed, grapefruit peel, ginger root, cinnamon bark, and butterfly pea blossom. Add to 32 oz of tonic water in a saucepan. Bring to a boil, and let steep for 20 minutes. Strain. Add Empress 1908 Gin in a 1:3 ratio, carbonate, and bottle. To serve: Torch the 8 botanicals and place a copa glass upside down over them to catch the smoke. Add a large, one-inch ice cube to the glass. Pour in the Empress & Tonic mixture from the bottle over the ice. Garnish with grapefruit peel.

    Method

    ROYAL EMPRESS FIZZ


    ingredients
    1OZ
    Empress 1908 Gin
    ½OZ
    Egg White
    ½OZ
    Elderflower Liqueur
    ½OZ
    Simple Syrup
    ¼OZ
    Fresh Lemon Juice
    2dash
    Peach Bitters
    Lemon Wedge or Twist
    Method
    Dry shake the ingredients by adding Empress 1908 Gin, egg white, elderflower liqueur, simple syrup, lemon juice and bitters to a cocktail shaker. Shake for 30 seconds until foamy. Fill the shaker with ice and shake carefully until the cocktail is cold. Strain into a chilled glass. Garnish with a small lemon wedge or twist.

    CITY OF GARDENS

    Pink Grapefruit Juice

    Western Haskap Bitters

    Egg white
    Edible Rose & Grapefruit Twist
    Method
    Add all ingredients to a cocktail shaker and shake without ice for about 30 seconds to build the foam. Add ice to the shaker and shake until chilled. Fine strain the cocktail into a coupe glass and garnish with an edible rose and a grapefruit twist.

    GARDEN BY THE SEA


    ingredients

    Empress 1908 Gin
    1OZ
    Chrysanthemum Honey Liqueur
    ½OZ
    Simple Syrup
    ½OZ
    Fresh Lime Juice
    ½OZ
    Fresh Lemon Juice
    3DASHES
    Celery Bitters
    1OZ
    Egg White
    1OZ
    Soda Water
    SPRITZ
    Salted Lavender Pea Flower Water
    Sea Beans, Edible Flowers, Fennel Fronds, Mint
    Method
    Add sea beans to a highball glass with ice. Add liqueur, syrup, lime, lemon and egg white to a shaker & dry shake. Add ice and shaker. Strain into the glass. Top with soda water. Slowly pour Empress Gin into the glass to float. Garnish. Spritz with infused lavender pea flower water. Stir before drinking.
