Tropical Spice Bitters
Combine rum, lime and pineapple juices, syrup and bitters in a tall glass. Fill 2/3 full with crushed or pebble ice. Take a bar spoon and “swizzle” by twisting the spoon between your two palms. Top with more crushed ice, then carefully “float” the Empress Gin over the top. Garnish with a fresh bouquet of mint and freshly grated nutmeg.
