    POMELO GIN FIZZ

    ingredients
    2OZ
    Empress 1908 Gin
    2OZ
    Fresh Pomelo Juice (or Grapefruit Juice)
    ¾OZ
    Lemon Simple Syrup
    1
    Egg White
    4DASH
    Cranberry Bitters
    Prosecco (To Top)
    Method
    Add all ingredients except prosecco to a shaker. Shake vigorously without ice for 30 seconds. Add ice, and shake again until chilled. Strain into a chilled coupe glass. Carefully top with prosecco. Garnish, and enjoy!
